5. 1 large red tomato, sliced -
6. 1/3 c. extra virgin olive oil -
7. 3 basil leaves, torn -
8. Kosher salt -

11. 3 slices bacon -
12. 2 leaves butterhead lettuce -
13. 1 1/2 tbsp. mayonnaise -
14. 2 tsp. freshly chopped chives -
15. 1 tsp. lemon zest -
16. 1 tbsp. Extra virgin olive oil -
17. 1/2 medium yellow onion, sliced -

How to cook deliciously - Insanely Easy Diner Sandwiches

1. Stage

Spread both sides of each slice of bread with mayo. In a skillet over medium heat, toast bread. Flip when undersides are golden and add cheese on one side. Top with remaining slice of bread. 

2. Stage

Toast until underside of bread is golden and cheese is starting to melt, then flip to toast the final untoasted slice of bread. Remove from pan when underside is golden and cheese is fully melted.

3. Stage

Preheat oven to 250° and line a small baking sheet with aluminum foil. Lay slices of tomato in an even layer and season with salt and pepper. Tear basil leaves and scatter over tomatoes. Drizzle with olive oil and roast until slightly smaller in size but still juicy, 2 hours.

Cook bacon: add bacon to a large skillet and heat over medium heat. Season generously with black pepper and cook until crisp. Remove from skillet and place on a paper towel lined plate to drain.

Make aioli: In a small bowl, whisk to combine mayo, chives, and lemon zest.

When tomatoes are roasted, remove from baking sheet and place on a plate. Dip both sides of bread in remaining oil. In a large skillet over medium heat, toast both sides of bread.

Build sandwich: spread aioli on bottom slice of bread, then top with roasted tomatoes, bacon, and lettuce. Top with remaining slice of bread and serve immediately.

In a large skillet over medium-low heat, heat oil. Add onions and cook, stirring occasionally, until golden and caramelized, 20 to 25 minutes. Season with salt and add vinegar to deglaze skillet. Use a wooden spoon to scrape up any brown bits at the bottom of the pan. (These have tons of flavor!)

Meanwhile, make patty mixture: in a large bowl, combine beef, ketchup, mustard, Worcestershire sauce, and garlic powder. Season with salt and pepper and mix until just combined. Form into a patty slightly larger than the size of your bread.

When onions are caramelized, remove from pan and place in a small bowl. Increase heat to medium-high and add patty. Cook until golden on one side, then flip and cook the other side. When both sides are golden, about 4 minutes per side, remove patty onto a plate and wipe out skillet.

11. Stage

Spread one side of each slice of bread with mayo and return skillet to medium heat. Add first slice of bread, mayo side down, onto skillet. Top with 2 slices of Swiss, the beef patty, caramelized onions, and remaining slices of cheese. Top with remaining slice of bread, mayo side out. 

12. Stage

When underside of bread is golden and cheese is starting to melt, flip sandwich and cook until cheese is completely melted and both sides of bread are golden, about 3 minutes per side.
