How to cook deliciously - Egg Creams with Spiced Chocolate Syrup

1. Stage

In a small saucepan, toast cardamom, peppercorns, and cinnamon over moderate heat until fragrant, about 2 minutes. Add 1 cup of water and bring to a boil. Remove from heat and let stand for 15 minutes. Stir in sugar and cocoa powder and return to a simmer. Cook for 5 minutes over low heat. Cool syrup, then strain it into a glass jar or plastic container.
