1. Ground turkey - 1 pound
2. Enchilada sauce - 1 (19 ounce) can
3. Black beans, drained - 1 (15 ounce) can
4. Uncooked quinoa - 1 ½ cups
5. Diced tomatoes and green chiles, undrained - 1 (10 ounce) can
6. Water - 1 cup
7. Frozen corn - 1 cup
8. Salsa - ½ cup
9. Chopped onion - ½ cup
10. Chopped green bell pepper - ½ cup
11. Chili powder - 1 tablespoon
12. Minced garlic - 1 teaspoon
13. Ground cumin - 1 teaspoon
14. Shredded Mexican cheese blend - 2 cups
15. Chopped fresh cilantro - ⅓ cup

How to cook deliciously - Ground Turkey Enchilada Stew with Quinoa

1. Stage

Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

2. Stage

Combine browned turkey, enchilada sauce, black beans, quinoa, diced tomatoes and chiles, water, corn, salsa, onion, green bell pepper, chili powder, garlic, and cumin in a slow cooker.

Cook in the slow cooker on High until quinoa is tender and flavors are blended, about 4 hours. Stir in Cheddar cheese and cilantro.
