1. Ground turkey 1 pound
2. Enchilada sauce 1 (19 ounce) can
3. Black beans, drained 1 (15 ounce) can
4. Uncooked quinoa 1 ½ cups
5. Diced tomatoes and green chiles, undrained 1 (10 ounce) can
6. Water 1 cup
7. Frozen corn 1 cup
8. Salsa ½ cup
9. Chopped onion ½ cup
10. Chopped green bell pepper ½ cup
11. Chili powder 1 tablespoon
12. Minced garlic 1 teaspoon
13. Ground cumin 1 teaspoon
14. Shredded Mexican cheese blend 2 cups
15. Chopped fresh cilantro ⅓ cup

How to cook deliciously - Ground Turkey Enchilada Stew with Quinoa

1 . Stage

Heat a large skillet over medium-high heat. Cook and stir turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.

2 . Stage

Combine browned turkey, enchilada sauce, black beans, quinoa, diced tomatoes and chiles, water, corn, salsa, onion, green bell pepper, chili powder, garlic, and cumin in a slow cooker.

3 . Stage

Cook in the slow cooker on High until quinoa is tender and flavors are blended, about 4 hours. Stir in Cheddar cheese and cilantro.
