1. 3/4 c. granulated sugar -
2. 1/2 vanilla bean, split (optional) -
3. Peel of 2 lemons or limes (optional) -
4. 1/3 c. thinly sliced peeled ginger (optional)  -
5. 1/4 c. packed fresh mint leaves (optional) -
6. 1 tbsp. dried lavender flowers (optional) -
7. 1 1/2 tsp. rosewater (optional) -

1. Stage

In a small saucepan over medium heat, bring sugar and 3/4 cup water to a boil. Reduce heat to medium-low simmer, stirring occasionally, until sugar is dissolved, about 3 minutes.

Add optional flavorings and continue to simmer, stirring, until fragrant, 2 to 4 minutes more. Remove from heat and let steep until syrup is completely cool, then strain into a clean jar or bottle.

Make Ahead: Syrup can be made 1 month ahead. Store in jar and refrigerate.
