1. 3 c. fresh corn -
2. 2/3 c. cornmeal -
3. 1/4 c. shredded cheddar -
4. 1/4 c. cream cheese -
6. 2 slices cooked bacon, chopped -
8. Juice of 1 lime, divided -
9. 1 jalapeño, finely diced -
How to cook deliciously - Jalapeño Corn Fritters
1. Stage
In a medium bowl, combine corn, cornmeal, cheddar, cream cheese, green onions, bacon, eggs, half the lime juice, and jalapeño. Stir to combine and season with salt and pepper. Using your hands, form the mixture into small patties.

Heat olive oil in a large skillet over medium heat. Working in batches, fry the patties until they’re golden brown, 3 to 4 minutes per side.

Garnish each with sour cream and a squeeze of lime, if desired.
