3. Sliced carrot - 1 cup
4. Sliced celery - ½ cup
5. Garlic, minced - 2 cloves
6. Low-sodium vegetable broth - 4 cups
7. Red kidney beans, rinsed and drained - 1 (15 ounce) can
8. Diced tomatoes, undrained - 1 (16 ounce) can
9. Elbow macaroni - 4 ounces
10. Tomato sauce - 1 (8 ounce) can
11. Drained canned peas - 1 ½ cups
12. Red wine vinegar - 2 tablespoons
13. Salt - ¼ teaspoon
14. Ground black pepper - ¼ teaspoon
15. Shredded Cheddar cheese - ½ cup

1. Stage

Heat oil in a Dutch oven over medium-high heat. Add onion, carrot, and celery. Cook, stirring occasionally, until vegetables begin to soften, about 5 minutes. Add garlic and cook, stirring frequently, 1 minute more.
