Add salt and sugar to the carrots, lightly rubbing with your hands. Pour the vinegar, stir.

Squeeze the garlic into the carrots, add the ground coriander, chili pepper flakes. Heat the oil until it is slightly smoky and pour it over the carrots, stir.

Set the carrots aside to infuse.

Wash and dry liver. Cut into medium slices. Pour vegetable oil in a hot frying pan, put the liver and brown on all sides over high heat.

Peel the onions and cut them into strips. For this purpose it is convenient to use the chopper of the food processor.

Pull the liver apart and put the onion in the middle. Fry the onions until transparent over medium heat.

Stir, add salt and pepper mixture, and stew for about 15 minutes over medium heat.

Let the liver cool down. Put the liver in the bowl of a combine, beat with a blender, add mayonnaise. If you are against mayonnaise, add butter. This component will give tenderness and plasticity to the pâté.
