1 . Stage
In the bowl of a food processor (nozzle - knife) put grated cheese, butter, flour, salt and pepper.

Turn on the mixer and stir until smooth (~15-20 seconds).

Use your hands to shape the dough into a ball.

Then divide it into two equal parts, forming them into cylinders (d4 cm). Wrap the cylinders in parchment or clingfilm and leave in the refrigerator for at least 2 hours (or better overnight).

Preheat the oven to 180°C. Line a baking tray with parchment. Take the dough out of the refrigerator and cut it into 0.5 cm thick circles. Arrange them on the baking tray.

Grease the cookies with beaten egg.

Then place a walnut on each circle and press lightly. Bake for ~15 minutes. Allow the finished cookies to cool for 5 minutes, then transfer to a platter. Serve warm or at room temperature.
