Ingredients for - Marinated Vegetable Medley

1. White vinegar - ⅔ cup
2. Vegetable oil - ⅔ cup
3. Chopped onion - ⅓ cup
4. White sugar - 1 teaspoon
5. Salt - 1 teaspoon
6. Dried basil - 1 teaspoon
7. Dried oregano - 1 teaspoon
8. Garlic powder - ⅛ teaspoon
9. Artichoke hearts, drained and quartered - 1 (14 ounce) can
10. Fresh broccoli florets - 1 cup
11. Cauliflower florets - 1 cup
12. Sliced carrots - 1 cup
13. Sliced fresh mushrooms - 1 cup

How to cook deliciously - Marinated Vegetable Medley

1. Stage

In a small saucepan, whisk together the vinegar, oil, onion, sugar, salt, basil, oregano and garlic powder. Bring mixture to a boil; cover, reduce heat and simmer 12 minutes.

2. Stage

In a large bowl, add the artichoke hearts, broccoli, cauliflower, carrot and mushrooms. Pour the vinegar mixture over all and toss to coat. Cover and chill at least 3 hours. Serve using a slotted spoon.
