1. Mini sweet peppers, sliced in half lengthwise 10
2. Extra virgin olive oil 2 teaspoons
3. Salt to taste 2 teaspoons
4. Goat cheese, softened 1 (5.5 ounce) package
5. Grated Parmesan cheese ⅓ cup
6. Jalapeno pepper, seeded and minced 1 medium
7. Minced garlic ½ teaspoon
8. Dried chopped chives ½ teaspoon
9. Freshly ground black pepper to taste ½ teaspoon

How to cook deliciously - Mini Stuffed Peppers

1 . Stage

Preheat the oven to 400 degrees F (200 degrees C).

Place pepper halves in a bowl. Add olive oil and salt; toss to combine.

Mix goat cheese, Parmesan cheese, jalapeño, garlic, chives, and black pepper together in a separate bowl until evenly combined. Spoon cheese mixture into pepper halves and place onto a baking sheet.
