1. 1 cup sugar -
2. 2 tablespoons plus 1-1/2 teaspoons cornstarch -
3. 1 teaspoon ground cinnamon -
4. 1-1/2 cups sour cream -
5. 3 large eggs, lightly beaten -
6. 2 cups raisins -
7. CRUMB MIXTURE: -
8. 1-3/4 cups all-purpose flour -
9. 1-3/4 cups quick-cooking oats -
10. 1 cup packed brown sugar -
11. 1 teaspoon baking soda -
12. 1/2 teaspoon salt -
13. 1 cup cold butter, cubed -

How to cook deliciously - Oatmeal Raisin Bars

1. Stage

In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in the sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce the heat, then cook and stir for an additional two minutes. Remove from the heat.

In a small bowl, lightly beat the eggs. Stir a small amount of hot filling into the eggs.

Once the eggs are tempered, pour them into the rest of the mixture in the pan, stirring constantly. Bring to a gentle boil, then cook and stir for an additional two minutes. Remove from the heat, gently stir in the raisins and then cool to room temperature without stirring further.

Preheat the oven to 350°F. In a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Cut in the butter with a butter knife or your fingers, mixing until crumbly.

Firmly press 3-1/2 cups oat-crumb mixture into a greased 13x9-inch baking pan. Cover it with the raisin filling, then sprinkle that with the remaining crumb mixture.

Bake for 25 to 30 minutes, or until golden brown. Cool on a wire rack, then cut into bars.
