2. Onion, roughly chopped, divided 1
3. Habanero peppers, halved 20
4. Aji dulce peppers, halved 5
5. Garlic, chopped 8 cloves
6. Pineapple juice 1 cup
7. Lime juice 6 tablespoons
8. Tequila ¼ cup
9. White vinegar ¼ cup
10. Cilantro, chopped 8 sprigs
11. Culantro 2 sprigs
12. White sugar 1 teaspoon
13. Dried oregano 1 teaspoon
14. Salt ½ teaspoon
15. Ground black pepper ½ teaspoon
16. Cacao powder ½ teaspoon
17. Ground cumin ½ teaspoon

How to cook deliciously - Pique (Puerto Rican Hot Sauce)

1 . Stage

Heat oil in a saucepan over medium heat. Add 1/4 of the onion, habanero peppers, aji dulce, and garlic. Cook and stir until tender, about 3 minutes. Let cool at least 5 minutes.

2 . Stage

Transfer pepper mixture to a blender. Add pineapple juice, lime juice, tequila, vinegar, cilantro, culantro, sugar, oregano, salt, black pepper, cacao powder, and cumin. Blend until smooth. Pour sauce into a glass bottle with a lid; let stand for a least 1 week for flavors to blend.
