1. 15 carrots (2 lbs), peeled and quartered -
2. 3 tbsp. extra-virgin olive oil -
3. Kosher salt -
4. Freshly ground black pepper -
5. Freshly chopped parsley, for garnish (optional) -

How to cook deliciously - Roasted Carrots

1. Stage

Preheat oven to 400º. On a large baking sheet, toss carrots with olive oil and season generously with salt and pepper.

2. Stage

Roast until tender and lightly caramelized, 30 minutes.

Garnish with parsley, if desired, before serving.
