1. Ajies dulces peppers, tops removed 10
2. Onions, cut into large chunks 4
3. Tomatoes, chopped 3 medium
4. Green bell peppers, seeded and chopped 2
5. Red bell peppers, seeded and chopped 1
6. Garlic, peeled 3 medium heads
7. Cilantro stems (with leaves) 25
8. Recao stems (with leaves) 25
9. Salt 1 tablespoon
10. Black pepper 1 tablespoon

How to cook deliciously - Sofrito

1 . Stage

Combine ajies dulces peppers, onions, tomatoes, green peppers, red peppers, and garlic in a food processor; pulse a few times. Add cilantro stems, recao stems, salt, and pepper. Process until a semi-chunky salsa (not watery) consistency is reached.

2 . Stage

Store in a resealable plastic freezer bag. Use as needed or freeze in portions.
