1. 1 c. oil-packed sun-dried tomatoes, roughly chopped (about 8-oz.) -
2. 1/4 c. extra-virgin olive oil from sun-dried tomato jar -
3. 2 tbsp. toasted pine nuts -
5. 1/4 tsp. Kosher salt, plus more as needed -
7. 2 tbsp. chopped fresh basil -
How to cook deliciously - Sun-Dried Tomato Pesto
1. Stage
Combine tomatoes, oil, pine nuts, garlic, salt, red pepper flakes, and basil in the bowl of a food processor. Process until smooth.
2. Stage
Transfer mixture to a medium bowl and stir in Parmesan. Taste and season with more salt, if needed.
