How to cook deliciously - Thin dough and sauce for Italian pizza
1. Stage
We put the sourdough: in warm water add sugar, a pinch of salt, yeast and 1 tbsp of flour. Put the bowl with the sourdough on the bowl with hot water and cover with a towel. Wait until foam appears. It will take 15 - 20 minutes. Then in a large bowl pour the remaining flour, salt, add olive oil and pour the sourdough. Knead the dough. Spread the dough on a lightly floured surface and knead for 10 minutes, adding flour as needed. The dough should be pliable and malleable. Brush the dough with olive oil, cover with clingfilm and leave to warm for 1 hour, then knead and leave for another 1 hour.

When the dough has risen, divide it into two pieces (that's for two pizzas). Place a ball of dough on a lightly floured surface and roll it in flour to form a flatbread. Do this only with your hands!

Prepare a baking tray in advance, grease it with olive oil. Preheat the oven to the maximum temperature!!! You can put a bowl of water in the bottom of the oven so that the bottom of the pizza does not burn. Now form the base of our pizza. If possible, we will not use a rolling pin. We'll pull the dough on the knuckles, like the Italians do! Stretch the pizza by turning the dough in a circle until it's a thin flatbread. (Well, if you can't do that, you can resort to a rolling pin, too.)

Now prepare the sauce. Cut the onion and peppers into small cubes and fry in a pan until golden brown. Then add the finely chopped tomatoes, simmer well. Salt and pepper it, add spices. Then whip everything in a blender.

Our delicious sauce is ready! No ketchup can compare, really! You could slather it on bread and eat it! We put our pizza base on a greased baking tray and smear liberally with the sauce.
