Ingredients for - Tzatziki Potato Salad
1. 1 1/2 lb. baby red potatoes, halved -
2. 1 tbsp. kosher salt, divided -
3. 2 Persian cucumbers, chopped -
4. 1/2 c. chopped dill pickles -
5. 1/4 c. freshly chopped dill -
8. Zest of ½ lemon -
13. 2/3 c. whole plain Greek yogurt -
15. Smoked paprika, for garnish (optional) -
How to cook deliciously - Tzatziki Potato Salad
1. Stage
In a large pot, cover potatoes with water and season with 2 teapoons salt. Bring water to a boil and cook until potatoes are easily pierced with a knife, 12 to 15 minutes.
2. Stage
Meanwhile, in a large bowl, stir together all remaining ingredients.
3. Stage
When potatoes are cooked, drain well and add to bowl while hot. Fold into dressing until well combined and let cool.
4. Stage
Garnish with paprika before serving, if desired.
