Ingredients for - Vegan Aquafaba Mayonnaise

1. Aquafaba (liquid from can of chickpeas) - 3 tablespoons
2. Red bell peppers, peeled and cut into 1/2-inch pieces - 1 tablespoon
3. Lemon juice - 1 tablespoon
4. Dijon mustard (such as Maille®) - 2 teaspoons
5. Avocado oil - ½ cup
6. Salt to taste - ½ cup

How to cook deliciously - Vegan Aquafaba Mayonnaise

1. Stage

Combine chickpea liquid, whole chickpeas, lemon juice, and mustard in a tall container. Using an immersion blender, blend on high speed until smooth.

2. Stage

Reduce speed to low and slowly drizzle in oil until creamy. Season with salt. Cover and refrigerate for up to 1 week.
