1. 1-1/4 cups packed dark brown sugar -
2. 1/2 cup canola oil -
3. 6 tablespoons vanilla soy milk -
4. 1/4 cup sugar -
5. 1/4 cup unsweetened applesauce -
6. 2 teaspoons vanilla extract -
7. 2-1/4 cups all-purpose flour -
8. 1 teaspoon baking soda -
9. 3/4 teaspoon salt -
10. 1 cup dairy-free semisweet chocolate chips -
11. 1/2 cup finely chopped walnuts -

1. Stage

To get started, beat together brown sugar, oil, soy milk, sugar, applesauce and vanilla in a large bowl until well blended.

In a separate bowl, whisk together flour, baking soda and salt.

Bake for 10 to 12 minutes or until the cookies' edges are lightly browned. Let the cookies cool for one minute on the baking sheets, then transfer the cookies to wire racks and let cool completely.
