1. 3/4 cup mashed potatoes -
2. 1/2 cup sugar -
3. 1/2 cup packed brown sugar -
4. 1/2 cup canola oil -
5. 2 large eggs, room temperature, lightly beaten -
6. 1 teaspoon vanilla extract -
7. 1/2 cup all-purpose flour -
8. 1/3 cup cocoa powder -
9. 1/2 teaspoon baking powder -
10. 1/8 teaspoon salt -
11. 1/2 cup chopped pecans, optional -
12. Confectioners' sugar -

How to cook deliciously - Super Spud Brownies

1. Stage

In a large bowl, combine the mashed potatoes, sugars, oil, eggs and vanilla. Combine the flour, cocoa, baking powder and salt; gradually add to potato mixture. Fold in pecans if desired. Transfer to a greased 9-in. square baking pan.

2. Stage

Bake at 350° until a toothpick inserted in the center comes out clean, 23-27 minutes. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.
