1. 4 medium Honeycrisp apples, peeled and cut into 1-inch pieces (about 1-1/2 pounds) -

How to cook deliciously - Apple Spice Cake

1. Stage

Preheat your oven to 350°F. Line the bottoms of two greased 9-inch round baking pans with parchment paper, then grease the parchment paper.

Place the apples in a food processor and pulse until they are finely chopped.

In a large bowl, beat together the sugar, oil, eggs and vanilla until the mixture is well blended.

In another bowl, whisk together the flour, pumpkin pie spice, baking powder and salt. Gradually beat this dry mixture into the sugar mixture, alternating with the buttermilk. Stir in the finely chopped apples and walnuts. Editor's Tip: Be careful not to overmix the batter once you combine the wet and dry ingredients. Overmixing can lead to a denser cake.

Transfer the batter to the prepared pans. Bake for 35 to 40 minutes, or until a toothpick inserted into the middle comes out clean. Cool the cakes in the pans for 10 minutes before transferring them to wire racks. Remove the parchment paper and let the cakes cool completely.

In a large bowl, beat together the cream cheese, butter, confectioners' sugar, brown sugar, vanilla and pumpkin pie spice until the mixture is smooth. Editor's Tip: For extra smooth frosting, sift the confectioners' sugar before adding it to the mixture.

Spread the frosting between each layer, as well as over the top and sides. Gently press the chopped walnuts into the frosting on the top of the cake. Refrigerate any leftovers. Editor's Tip: For a cleaner finish, apply a thin crumb coat of frosting first. Chill the cake for 15 minutes, then apply the remaining frosting. This helps prevent crumbs from mixing into the outer layer of frosting.
