Ingredients for - Baked Cod

1. 4 cod filets, about 1" thick -
2. Kosher salt -
3. Freshly ground black pepper -
4. 4 tbsp. extra-virgin olive oil, plus more for baking dish -
5. 1 c. cherry tomatoes -
6. 1 lemon, sliced, plus more for garnish -
7. 2 garlic cloves, smashed but not peeled -
8. 2 sprigs thyme -
9. 1/4 tsp. red pepper flakes -
10. 2 tbsp. freshly chopped parsley, for garnish -

How to cook deliciously - Baked Cod

1. Stage

Preheat the oven to 400° and pat cod filets with a paper towel until dry. Season all over with salt and pepper. 

2. Stage

Combine olive oil, cherry tomatoes, lemon slices, garlic, thyme, and red pepper flakes in a 9"-x-13" baking dish. Toss to coat and spread into an even layer. Nestle cod pieces into baking dish. 

3. Stage

Bake until fish is opaque and flakes easily with a fork, 25 to 30  minutes, depending on thickness of filets. 

4. Stage

Serve garnished with parsley, more lemon juice, and pan sauce.
