Ingredients for - Cheesy Taco Bake

1. 1 tbsp. extra-virgin olive oil -
2. 1 white onion, chopped -
3. 1 1/2 lb. ground beef -
4. 2 cloves garlic, minced -
5. 2 tsp. chili powder -
6. 2 tsp. ground cumin -
7. 1/4 tsp. cayenne -
8. oz. can fire-roasted tomatoes -
9. 1/2 c. sour cream -
10. 3/4 c. water -
11. 1/4 c. freshly chopped cilantro, plus more for garnish -
12. 1 bag tortilla chips (I used restaurant style) -
13. 2 c. shredded Cheddar -
14. 2 c. shredded pepper jack -

How to cook deliciously - Cheesy Taco Bake

1. Stage

In a large skillet over medium heat, heat oil. Add onions and cook until soft, 5 minutes. Add ground beef and cook until no longer pink, 6 minutes. Drain fat.

2. Stage

Add garlic, cumin, chili powder, cayenne, fire-roasted tomatoes, sour cream, and water to skillet and stir until combined. Let thicken 5 minutes. Stir in cilantro.

3. Stage

In a casserole dish, place a layer of tortilla chips, ground beef mixture, and cheeses. Repeat until ground beef mixture is used up.

4. Stage

Bake until cheese is melted and tortilla chips soft, 20 minutes. Let cool 5 minutes before slicing and serving.
