1. Dried wood ear mushrooms ½ ounce
2. Lime juice 1 tablespoon
3. Light soy sauce 1 tablespoon
4. Sesame oil 1 tablespoon
5. Grated ginger 1 teaspoon
6. Palm sugar 1 teaspoon
7. Chopped Thai chile pepper ½ teaspoon
8. Japanese cucumber, thinly sliced 1
9. Sesame seeds 1 teaspoon

1 . Stage

Soak mushrooms in water until hydrated, 15 to 20 minutes. Drain and place in a saucepan over medium heat; boil for 2 minutes. Drain and let cool.
