1. Raw cashews - ¼ cup
2. Ripe banana - 1
3. Ice cubes - 1 cup
4. Extra-firm tofu, pressed to remove water - 3 ounces
5. Medjool dates, pitted - 2
6. Cacao powder - ⅓ cup
7. Vanilla extract - 2 teaspoons
8. Soy milk, or more as needed - 1 teaspoon
9. Dried cherries, chopped - ⅓ cup
10. Vegan chocolate chips - ⅓ cup

How to cook deliciously - Chocolate-Cherry-Chip Vegan Nice Cream

1. Stage

Place cashews in a bowl and cover with water. Soak for 1 to 3 hours. Drain.

2. Stage

Combine soaked cashews, banana, ice cubes, tofu, dates, cacao powder, vanilla extract, and 1 teaspoon soy milk in a blender. Process until smooth. Add an additional teaspoon of soy milk only if needed, in order to keep the mixture as thick as possible.

Stir in cherries and chocolate chips; pour into a bowl to serve.
