Ingredients for - Creamy Buttermilk and Parsley Mashed Idaho Potatoes

1. Idaho® Gold Potatoes 8 large
2. Soft butter ½ cup
3. Shredded Parmesan cheese ½ cup
4. Buttermilk 1 ½ cups
5. Heavy cream, or more to taste 1 cup
6. Flat leaf parsley, roughly chopped 1 bunch
7. Kosher salt 1 teaspoon

How to cook deliciously - Creamy Buttermilk and Parsley Mashed Idaho Potatoes

1 . Stage

Slice all potatoes in half, place in a large pan, and cover with cool water.

2 . Stage

Bring to a boil for 25 to 35 minutes or until potatoes are tender enough to mash.

3 . Stage

Drain water and add remaining ingredients. The parsley cooks slightly with the heat of the potatoes.

4 . Stage

Mash by hand or with a hand mixer; season to taste with salt.
