Ingredients for - Creamy Buttermilk and Parsley Mashed Idaho Potatoes

1. Idaho® Gold Potatoes - 8 large
2. Soft butter - ½ cup
3. Shredded Parmesan cheese - ½ cup
4. Buttermilk - 1 ½ cups
5. Heavy cream, or more to taste - 1 cup
6. Flat leaf parsley, roughly chopped - 1 bunch
7. Kosher salt - 1 teaspoon

How to cook deliciously - Creamy Buttermilk and Parsley Mashed Idaho Potatoes

1. Stage

Slice all potatoes in half, place in a large pan, and cover with cool water.

2. Stage

Bring to a boil for 25 to 35 minutes or until potatoes are tender enough to mash.

Drain water and add remaining ingredients. The parsley cooks slightly with the heat of the potatoes.

Mash by hand or with a hand mixer; season to taste with salt.
