1. English cucumber 1 large
2. Shredded carrots 1 cup
3. Rice wine vinegar 2 tablespoons
4. White sugar 1 teaspoon
5. Minced fresh ginger ½ teaspoon
6. Salt ½ teaspoon

1 . Stage

Peel cucumber and slice in half lengthwise. Scoop out the seeds and cut into 1/8-inch thick slices. Transfer to a medium bowl with carrots.
