Ingredients for - Cucumber Sushi

1. 2 medium English cucumbers, halved -
2. 1/4 avocado, thinly sliced -
3. 1/2 red bell pepper, seeds and ribs removed, thinly sliced -
4. 1/2 yellow bell pepper, seeds and ribs removed, thinly sliced -
5. 2 small carrots, thinly sliced -
6. 1/3 c. mayonnaise -
7. 1 tbsp. Sriracha -
8. 1 tsp. soy sauce -

How to cook deliciously - Cucumber Sushi

1. Stage

Using a small spoon, remove seeds from center of cucumbers until hollow.

2. Stage

Press avocado into center of cucumber. Using a butter knife, press inside cucumber. Side in bell peppers and carrots until cucumber is full.

3. Stage

In a small bowl, whisk mayonnaise, sriracha, and soy sauce until combined.

4. Stage

Slice cucumber rounds into 1"-thick pieces and arrange on a platter. Serve with sauce alongside.
