1. Margarine - 4 tablespoons
2. Chopped onion - ¾ cup
3. Chopped carrots - ½ cup
4. Chopped celery - ¼ cup
5. Chicken broth - 1 (32 ounce) container
6. Cannellini beans - 1 (19 ounce) can
7. Stewed tomatoes - 1 (14.5 ounce) can
8. Cubed potatoes - 1 ½ cups
9. Shredded cabbage - ½ cup
10. Dried parsley - 2 tablespoons
11. Tomato paste - 1 tablespoon
12. Garlic, minced - 2 cloves
13. Salt - 1 teaspoon
14. Elbow macaroni - ½ cup
15. Grated Parmesan cheese - ½ cup

How to cook deliciously - Hearty Minestrone Soup

1. Stage

Melt margarine in a heavy stockpot over medium heat. Add onion, carrots, and celery; sauté until beginning to soften, 3 to 4 minutes. Add broth, beans, tomatoes, potatoes, cabbage, parsley, tomato paste, garlic, and salt; bring to a boil.

2. Stage

Reduce the heat, cover, and simmer until vegetables are tender, about 1 hour. Add pasta and simmer for 30 minutes more. Adjust seasoning as needed.

Ladle into bowls and garnish with Parmesan cheese.
