1. Egg yolks - 3 large
2. Fresh lemon juice - 1 ½ tablespoons
3. Unsalted butter, chilled - 4 tablespoons
4. Unsalted butter, melted - ¾ cup
5. Salt and ground white pepper to taste - ¾ cup

Place egg yolks into a small saucepan; whisk until lemon yellow and slightly thick, about 1 minute. Whisk in lemon juice until combined. Dotdash Meredith Food Studios

Add 2 tablespoons cold butter to egg mixture, then place the pan over very low heat. Whisk constantly while butter melts; continue whisking until mixture is thick enough to see the bottom of the pan between strokes. Dotdash Meredith Food Studios
