2. Limes, juiced - 2 medium
3. Tamarind paste, or to taste - 2 teaspoons
4. Garam masala - 1 ½ teaspoons
5. Ground cumin - ½ teaspoon
6. Hot sauce - 2 teaspoons
7. White sugar - 1 teaspoon
8. Water, or as needed - ¼ cup
9. Kettle-cooked potato chips - 12 cups
10. Thinly sliced jalapeno pepper - ½ cup
11. Thinly sliced red bell pepper - ½ cup
12. Thinly sliced red onion - ½ cup
13. Thinly sliced green onion - ½ cup
14. Sliced cooked purple potatoes (Optional) - 1 cup
15. Chopped fresh mint leaves - 1 cup
16. Chopped fresh cilantro leaves - 1 cup
17. Limes, halved - 2 medium

1. Stage

Combine yogurt, lime juice, tamarind paste, garam masala, cumin, hot sauce, and sugar in a bowl with a whisk until combined. Taste and adjust as needed; mix in water as needed to reach desired consistency.
