1. Sake 1 tablespoon
2. Mirin (Japanese sweet wine) 1 tablespoon
3. Grated ginger 1 teaspoon
4. Grated garlic 1 teaspoon
5. Soy sauce 1 teaspoon
6. Ground black pepper to taste 1 teaspoon
7. Boneless, skinless chicken thighs 1 ½ pounds
8. Mayonnaise ½ cup
9. White miso paste ¼ cup
10. Grated ginger ⅛ cup
11. Grated garlic ⅛ cup
12. Soy sauce ⅛ cup
13. Honey 1 teaspoon
14. Shredded cabbage 1 cup
15. Shredded carrots ¾ cup
16. Chopped fresh cilantro ½ cup
17. Cider vinegar ½ cup
18. Finely chopped green onions ¼ cup
19. Toasted sesame oil 2 tablespoons
20. Sesame seeds 2 tablespoons
21. Salt and ground black pepper to taste 2 tablespoons
22. Peanut oil for frying, or as needed 1 cup
23. Cornstarch ½ cup
24. 4 potato buns, split and toasted ½ cup
25. Shichimi togarashi (Japanese seven spice), or to taste ½ teaspoon

How to cook deliciously - Karaage Chicken Sandwich

1 . Stage

Combine sake, mirin, ginger, garlic, soy sauce, and pepper for marinade in a glass or ceramic bowl and mix well. Add chicken and marinate in the refrigerator for at least 30 minutes.

2 . Stage

While chicken marinates, combine mayonnaise, miso, ginger, garlic, soy sauce, and honey for the miso mayonnaise in a bowl.

Combine cabbage, carrots, cilantro, vinegar, green onions, sesame oil, sesame seeds, salt, and pepper for the slaw in another bowl.

4 . Stage

Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Remove chicken from marinade and dredge in cornstarch, knocking off any excess.

5 . Stage

Fry chicken in the hot oil until no longer pink in the centers and golden brown on the outsides, 4 to 5 minutes on each side.

Coat toasted buns with miso mayonnaise. Add fried chicken, top with slaw, and sprinkle each with togarashi. Serve.
