Ingredients for - Cumin Rubbed Chicken with Avocado Salsa

1. Salt, divided - 1 teaspoon
2. Cumin - ½ teaspoon
3. Ground red pepper, or more to taste - ¼ teaspoon
4. Olive oil - 1 tablespoon
5. Boneless skinless chicken breast halves - 4 (4 ounce)
6. Fully ripened Avocado from Mexico, halved, pitted, peeled and cubed - 1
7. Chopped tomato - 1 cup
8. Diced cucumber - ½ cup
9. Diced red onion - ¼ cup
10. Chopped fresh cilantro - ¼ cup
11. Lime juice - 2 tablespoons

How to cook deliciously - Cumin Rubbed Chicken with Avocado Salsa

1. Stage

In small bowl, combine 1/2 teaspoon of the salt, the cumin and pepper; rub on chicken.

2. Stage

In large non-stick skillet, heat oil over medium heat. Add chicken; cook, turning occasionally, until no longer pink in the center, about 10 minutes.

3. Stage

Meanwhile, in medium bowl, combine Avocado, tomato, cucumber, onion, cilantro and remaining 1/2 teaspoon salt.

Serve over cumin-rubbed chicken with whole grain couscous or rice, if desired.
