1. Black-eyed peas, drained - 2 (15 ounce) cans
2. Green onions, chopped - 1 bunch
3. Celery, chopped - 2 stalks
4. Green bell pepper, chopped - 1 medium
5. Diced pimentos, drained - 1 (2 ounce) jar
6. Bacon bits - 1 (3 ounce) jar
7. Sugar - ¼ cup
8. Red wine vinegar - ¼ cup
9. Olive oil - ¼ cup
10. Balsamic Vinegar - 2 tablespoons
11. Salt and pepper to taste - 2 tablespoons

1. Stage

In a large bowl, mix the black-eyed peas, green onions, celery, bell pepper, pimentos, and bacon bits.

In a separate bowl, mix the sugar, red wine vinegar, olive oil, balsamic vinegar, salt, and pepper. Toss with the salad. Cover and chill at least 3 hours before serving.
