1. Water - 2 cups
2. Quinoa, rinsed - 1 cup
3. Sweet potatoes, peeled and cubed - 2
4. Olive oil - 2 tablespoons
5. Chopped broccoli - 1 cup
6. Yellow bell pepper, diced - 1
7. Red bell pepper, diced - 1
8. Cucumber - peeled, seeded, and chopped - ½
9. Extra-virgin olive oil - ¼ cup
10. Maple syrup - 2 tablespoons
11. Lemon, juiced - ½
12. Lime, juiced - ½
13. Salt and ground black pepper to taste - ½
14. Chopped cilantro - ½ cup

How to cook deliciously - Roasted Sweet Potato Quinoa Salad

1. Stage

Preheat oven to 400 degrees F (200 degrees C).

Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Set aside to cool.
