2. Quinoa, rinsed 1 cup
3. Sweet potatoes, peeled and cubed 2
4. Olive oil 2 tablespoons
5. Chopped broccoli 1 cup
6. Yellow bell pepper, diced 1
7. Red bell pepper, diced 1
8. Cucumber - peeled, seeded, and chopped ½
9. Extra-virgin olive oil ¼ cup
10. Maple syrup 2 tablespoons
11. Lemon, juiced ½
12. Lime, juiced ½
13. Salt and ground black pepper to taste ½
14. Chopped cilantro ½ cup

How to cook deliciously - Roasted Sweet Potato Quinoa Salad

1 . Stage

Preheat oven to 400 degrees F (200 degrees C).

Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes. Set aside to cool.

Toss sweet potatoes in olive oil on a baking sheet.
