Ingredients for - Easy Oxtail Stew

1. Beef oxtail, cut into pieces - 2 pounds
2. Water - 6 cups
3. Beef broth (such as Swanson®) - 1 (14 ounce) can
4. Onion, chopped - 1 large
5. Garlic, minced, or more to taste - 2 cloves
6. Onion salt - ½ teaspoon
7. Salt and ground black pepper to taste - ½ teaspoon
8. Unpeeled red potatoes, cubed - 6 medium
9. Sliced carrots - 1 cup
10. Sliced fresh mushrooms - 1 cup
11. Green bell pepper, chopped - ½ medium
12. Green onions, chopped - 1 bunch

How to cook deliciously - Easy Oxtail Stew

1. Stage

Mix oxtail, water, broth, onion, garlic, onion salt, salt, and pepper together in a large Dutch oven. Bring to a boil. Cover, turn heat down to a simmer, and cook until meat falls from the bone, about 2 1/2 hours.

Stir potatoes, carrots, mushrooms, bell pepper, and green onions into the pot. Cover and let simmer until vegetables are tender, 15 to 20 minutes.
