2. Bottom round beef roast, trimmed and cut into chunks - 2 pounds
3. Water - 2 cups
4. Carrots, sliced - 3 large
5. Onion, sliced and chopped - ½
6. Celery, chopped - 2 stalks
7. Worcestershire sauce - 1 tablespoon
8. Salt - 2 teaspoons
9. White sugar - 2 teaspoons
10. Ground black pepper - 1 teaspoon
11. Paprika - 1 teaspoon
12. Garlic, pressed - 1 clove
13. Bay leaves, or more to taste - 2
14. Ground allspice - 1 pinch
15. Russet potatoes, chopped, or more to taste - 2

1. Stage

Heat vegetable oil in a large skillet over high heat; sear beef until browned on all sides, about 5 minutes. Transfer beef and oil to a large pot.

2. Stage

Mix water, carrots, onion, celery, Worcestershire sauce, salt, sugar, pepper, paprika, garlic, bay leaves, and allspice with beef; cover pot and simmer over low heat for 1 1/2 hours. Add potatoes to stew, cover pot, and simmer until potatoes are tender, about 40 minutes more.
