Ingredients for - Bolognese Zucchini Noodles

1. Olive oil - 1 tablespoon
2. Button mushrooms, diced - 1 (8 ounce) package
3. Bell pepper, diced - 1 medium
4. Red onion, diced - 1 medium
5. Carrot, diced - 1 medium
6. Garlic, minced - 2 cloves
7. Ground beef - 1 pound
8. 10 cherry tomatoes - 1 pound
9. Vodka marinara sauce - 2 cups
10. Zucchini noodles - 16 ounces
11. Baby spinach - 1 cup
12. Salt and ground black pepper to taste - 1 cup
13. Chopped fresh oregano, or to taste - 1 teaspoon
14. Chopped fresh basil, or to taste - 1 teaspoon
15. Grated Parmesan cheese, or to taste - 1 tablespoon

How to cook deliciously - Bolognese Zucchini Noodles

1. Stage

Heat olive oil in a large pan over medium heat. Add mushrooms, bell pepper, onion, and carrot; saute until browned, 5 to 7 minutes. Add garlic and cook until fragrant, about 1 minute. Add ground beef; cook and stir until browned and crumbly, 5 to 7 minutes.

2. Stage

Cut cherry tomatoes in half and add to the meat. Pour in vodka sauce and reduce heat to low. Add zucchini noodles, baby spinach, salt, and pepper. Cook and stir until spinach has wilted, zucchini is tender, and sauce is heated through, about 5 minutes. Add oregano and basil.

3. Stage

Sprinkle Parmesan on top and serve.
