Ingredients for - Kristi's Corn Salad

1. Frozen corn kernels, thawed 2 (16 ounce) packages
2. Zucchini, diced 2 small
3. Chopped pimento peppers 1 (2 ounce) jar
4. Chopped red onion ½ cup
5. Chopped green chile peppers, drained 1 (4 ounce) can
6. Olive oil ⅔ cup
7. Fresh lime juice ¼ cup
8. Cider vinegar 2 tablespoons
9. Ground cumin 2 teaspoons
10. Salt 1 ½ teaspoons
11. Ground black pepper 1 teaspoon
12. Garlic salt ½ teaspoon

How to cook deliciously - Kristi's Corn Salad

1 . Stage

In a large bowl, toss together the corn, zucchini, pimentos, red onion, and green chile peppers.

2 . Stage

In a jar with a lid, mix the olive oil, lime juice, cider vinegar, cumin, salt, pepper, and garlic salt. Seal, and shake well.

3 . Stage

Pour the oil mixture over the corn mixture, and gently stir to coat all ingredients. Cover, and chill at least 3 hours in the refrigerator before serving.
