1. Dry black-eyed peas - 1 (16 ounce) package
2. Green bell pepper, diced - ½
3. Red bell pepper, diced - ½
4. Yellow bell pepper, diced - ½
5. Red onion, diced - ½ small
6. Celery, diced - 1 stalk
7. Scallions, chopped - 2 stalks
8. Vegetable oil - ⅛ cup
9. White vinegar - ⅛ cup
10. White sugar - ⅛ cup
11. Garlic, minced - 1 clove
12. Hot pepper sauce (such as Tabasco®), or to taste - 1 drop
13. Salt and ground black pepper to taste - 1 drop
14. Chopped fresh parsley - ¼ cup
15. Chopped fresh basil - ¼ cup

How to cook deliciously - Make-Ahead Black-Eyed Pea Salad

1. Stage

Place peas into a large container and cover with several inches of cool water; let soak, 8 hours to overnight. Drain.

2. Stage

Mix bell peppers, onion, celery, and scallions with peas in a large bowl.

3. Stage

Mix oil, vinegar, sugar, garlic, hot sauce, salt, and pepper in a small bowl. Add to pea mixture and toss to coat.

4. Stage

Cover and marinate in the refrigerator for 8 hours, or overnight. Add parsley and basil just before serving.
