Ingredients for - Matzo Granola

1. 3 sheets unsalted matzo, crumbled into bite-size pieces (about 3 1/2 oz. total) -
2. 1 large apple, peeled, cored, cut into 1/4" cubes (about 1 c.) -
3. 1 c. whole raw almonds, coarsely chopped -
4. 1/2 c. roasted, salted pistachios, coarsely chopped -
5. 1/4 c. coconut oil -
6. 1/4 c. pure maple syrup -
7. 3 tbsp. dark brown sugar -
8. 2 tbsp. pomegranate molasses -
9. 3/4 tsp. kosher salt -
10. 1/2 tsp. freshly ground black pepper -
11. 1/2 tsp. ground cinnamon -
12. 1/2 c. dried cherries -
13. Whole-milk Greek yogurt, for serving (optional) -

How to cook deliciously - Matzo Granola

1. Stage

Preheat oven to 300° and line a large baking sheet with parchment. In a large heatproof bowl, combine matzo, apples, almonds, and pistachios.

2. Stage

In a small heatproof bowl, combine oil, maple syrup, brown sugar, and molasses. Heat in 15-second increments, stirring between each, until sugar is dissolved, about 1 minute total. Pour over matzo mixture. Add salt, pepper, and cinnamon and toss to combine. Spread mixture onto prepared sheet.

3. Stage

Bake granola, tossing halfway through, until mixture starts to brown, 40 to 45 minutes. Let cool completely.

Transfer granola to a large bowl. Mix in cherries. Serve with yogurt alongside (if using).

Make Ahead: Granola can be made up to a day ahead ahead. Transfer to an airtight container and store at room temperature.
