Ingredients for - Melissa's Green Chile Stew

1. Vegetable oil - 1 tablespoon
2. Ground beef - 1 pound
3. Potatoes, peeled and cubed - 5 medium
4. Stewed tomatoes - 1 (14.5 ounce) can
5. Chopped green chile peppers - 1 cup
6. Chopped onion - ½ cup
7. Water - 2 cups
8. Salt and ground black pepper to taste - 2 cups

1. Stage

Heat oil in a large stockpot over medium-high heat. Crumble beef into the pot and cook, stirring frequently, until well-browned, 7 to 10 minutes. Drain and discard grease.

Return the pot to the stove and add potatoes, tomatoes, chile peppers, and onion to the beef. Pour in water, stir to combine, and bring to a boil. Reduce heat and simmer until flavors have blended, about 1 hour.
