Ingredients for - Kicked-Up Potato Pancakes

1. Potatoes, peeled and shredded - 2 large
2. Shredded deli smoked ham - ¾ cup
3. Eggs - 3
4. Shredded mozzarella cheese - ¾ cup
5. Onion Powder - 1 teaspoon
6. Garlic powder - 1 teaspoon
7. Salt and ground black pepper to taste - 1 teaspoon
8. Olive oil for frying - 1 teaspoon
9. Green onion, chopped - 1
10. Grated Parmesan cheese - ½ cup

How to cook deliciously - Kicked-Up Potato Pancakes

1. Stage

Combine potatoes, ham, eggs, mozzarella cheese, onion powder, garlic powder, salt, and black pepper in a bowl.

2. Stage

Heat a large skillet over medium-low heat. Pour enough olive oil to cover bottom of pan.

3. Stage

Scoop up about 1/2 cup of potato mixture per pancake and form into a patty. Repeat, making 8 patties in all.

4. Stage

Place 4 pancakes at time in hot olive oil. Cook until browned, about 4 minutes on each side. Transfer to paper towel-lined plate.

5. Stage

Sprinkle with green onion and Parmesan cheese.
