1. 1 large onion, chopped -
2. 3 tablespoons butter -
3. 3 tablespoons all-purpose flour -
4. 1/2 teaspoon salt -
5. Pepper to taste -
6. 4 cups whole milk -
7. 2 cups shredded Colby-Monterey Jack cheese -
8. Seasoned salad croutons -
9. Optional: Grated Parmesan cheese and minced chives -

How to cook deliciously - Onion Cheese Soup

1. Stage

In a large saucepan, saute the onion in butter. Stir in the flour, salt and pepper until blended. Gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened.

2. Stage

Stir in cheese until melted. Serve with croutons and; if desired, top with Parmesan cheese and minced chives.
