1. Pasta - 8 ounces
2. Olive oil - 4 tablespoons
3. Red wine vinegar - 2 tablespoons
4. Whole corn kernels, cooked - ½ cup
5. Tomatoes, chopped - 4
6. Chopped green onions - ½ cup
7. Dried basil - 1 teaspoon
8. Salt to taste - 1 teaspoon
9. Ground black pepper to taste - 1 teaspoon
10. Grated Parmesan cheese - 1 tablespoon
11. Chopped fresh basil (Optional) - 2 teaspoons

How to cook deliciously - Pasta with Fresh Tomatoes and Corn

1. Stage

In a large pot with boiling salted water cook pasta until al dente. Drain.

Meanwhile, in a large bowl whisk together the olive oil, red wine vinegar, and dried basil. Add salt and pepper to taste. Stir in the tomatoes, corn kernels, and scallions. Let sit for 5 to 10 minutes.

Toss pasta with tomato mixture. Sprinkle with grated parmesan cheese. Garnish with fresh basil, if desired.
