12. 1 1/2 c. grated zucchini (about 1 medium zucchini) -

1. Stage

Preheat oven to 350°. Grease an 9”-x-5” loaf pan with cooking spray, line with parchment, then lightly grease again.

In a large bowl, whisk together flour, cinnamon, nutmeg, baking soda, baking powder, and salt.

In another large bowl, stir together melted butter, sugar, and vanilla. Mix in egg and egg yolk, then fold in zucchini. Fold wet ingredients into flour mixture until completely incorporated.

Transfer mixture to prepared pan and bake until a toothpick comes out clean, 45 to 48 minutes.

Let cool slightly in pan, then transfer loaf to a wire rack to let cool completely.
