Ingredients for - Spinach Rice

1. 2 tablespoons olive oil -
2. 1/2 cup chopped onion -
3. 3/4 cup water -
4. 1 tablespoon dried parsley flakes -
5. 1/4 to 1/2 teaspoon salt -
6. 1/8 teaspoon pepper -
7. 1/2 cup uncooked instant rice -
8. 2 cups fresh baby spinach -

How to cook deliciously - Spinach Rice

1. Stage

In a saucepan, heat the oil over medium-high heat. Saute the onion until tender, then stir in the water, parsley, salt and pepper. Editor's Tip: If you're using fresh parsley, wait to add it until the end.

2. Stage

Bring the mixture to a boil and stir in the rice. Fold in the spinach, then cover the pan and remove from the heat.

3. Stage

Let the rice rest for 7 to 10 minutes so the steam has a chance to wilt the spinach and fluff up the rice. Uncover, stir to combine and serve.
