1. 5 pounds sweet potatoes, peeled and cooked -
2. 4 large eggs, lightly beaten -
3. 1/2 cup orange juice -
4. 1/2 cup butter, softened -
5. 1/2 cup sugar -
6. 1 teaspoon vanilla extract -
7. 1/2 teaspoon ground nutmeg -
8. Dash salt -
9. 1 cup miniature marshmallows -

How to cook deliciously - Sweet Potatoes with Marshmallows

1. Stage

Preheat the oven to 350°F. In a large bowl, mash sweet potatoes until they’re mostly lump-free (you’ll be doing a bit more mixing in the next step). Editor’s Tip: Avoid over-mashing or the potatoes will turn gummy.

Add the eggs, orange juice, butter, sugar, vanilla, nutmeg and salt and stir everything together until well combined.

Transfer the filling to a greased 3-quart baking dish. Bake until it’s set, 35 to 40 minutes.

Scatter the marshmallows all over the filling. Return the baking dish to the oven and bake until the marshmallows just begin to puff and melt, 5 to 10 minutes.
