1. Mochiko (sweet rice flour) - 1 (16 ounce) box
2. White sugar - 2 cups
3. Baking powder - 2 teaspoons
4. Ground cinnamon (Optional) - ¼ teaspoon
5. Eggs - 3
6. Vanilla extract - 2 teaspoons
7. Coconut milk - 1 (14 ounce) can
8. Evaporated milk - 1 (12 fluid ounce) can
9. Unsalted butter, melted and cooled - ½ cup

1. Stage

Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch pan.

Mix mochiko, sugar, baking powder, and cinnamon together in a large bowl.
