1. Bacon grease, divided - 3 tablespoons
2. Broccoli, chopped - 1 head
3. Onion, diced - 1
4. Green bell pepper, chopped - 1
5. Minced black olives - ½ (6 ounce) can
6. Minced garlic - 2 teaspoons
7. Chopped fresh oregano - 1 teaspoon
8. Chopped fresh basil - 1 teaspoon
9. Salt and ground black pepper to taste - 1 teaspoon
10. Eggs - 6 large
11. Shredded mozzarella cheese - 1 cup

How to cook deliciously - Cast Iron Skillet Vegetable Frittata

1. Stage

Preheat the oven to 350 degrees F (175 degrees C).

2. Stage

Heat a cast iron skillet over medium to medium-low heat. Add 2 tablespoons bacon grease. Stir in broccoli, onion, bell pepper, olives, garlic, oregano, basil, salt, and pepper and cook until vegetables are tender, 7 to 10 minutes. Remove from heat.

Beat eggs in a bowl using a fork. Add mozzarella cheese and cooked vegetable mixture and stir to combine.

Reheat the skillet over low heat; add remaining bacon grease. Pour egg mixture into the skillet.
